CAIA, (The
Culinary Art Institute of Africa) was founded
in 1994 by the acclaimed South African gastronome,
Peter Veldsman as a hands-on facility to train
future chefs, service staff and restaurateurs.
Students train in a real-life, local and internationally
acclaimed restaurant - Emily's. CAIA classes
are given in both ENGLISH and AFRIKAANS. To
date it is the only facility in South Africa
to have produced two winners in the annual "Top
Ten Restaurant Awards".
A REALISTIC ENVIRONMENT
There is more to education
than is taught in a classroom.
CAIA does not boast large-scale, government
buildings or subsidies. It is privately owned
and offers the kind of environment you will
find in France at such establishments as the
Ecole du Moulin.

the scenes look' at the inner working of a restaurant,
yet they want to become chefs / restaurateurs.
CAIA offers students a `look and see' visit
without any obligation. Simply call us and arrange
to spend a day or two (or longer) with us in
order to meet the staff and students and to
see how we operate. CAIA, with its restaurant
Emily', is the only training institute in South
Africa to have achieved a listing as one of
the country's Top 10 restaurants. Emily's received
numerous local and international awards icluding
the "Waterfront Restaurant of the Year
2008"award as best fine dining restaurant.

We are in the business of making
magic. The water glass is filled without notice,
the wines served at the right temperature, the
linen crisp, the flowers fresh. The meal proceeds
smoothly. However, what appears to be effortless
is not, for making magic is more than just an
illusion - it takes knowledge, practise and,
above all, the skill, which earns standing ovations.
The CAIA diploma provides you
with such skills.
CAIA emphasises an intensive
hands-on practical approach augmented by theory.
CAIA Students work a six day / 45 hour week
for a three year period. This is the direct
opposite of most other related training institutions
in South Africa. At the end of the second year
of training, successful students receive a Certificate
of Attendance and at the end of the third year
they graduate with an Associated Diploma in
Specialised Technology. During the three years
of student apprenticeship at Emily's restaurant,
as well as earning a basic salary, they also
contribute to the unemployment fund and are
issued with an unemployment certificate with
three years credit. In practice this means a
much higher starting salary for C.A.I.A students.
The CAIA Campus
Our campus is located in the magnificent Waterfront
in Cape Town visited by hundreds of thousands
of tourists from all over the world.
